It’s Monday!  Time to plan those meals so nothing in the fridge goes to waste!  Is there anything worse than throwing away food that you’ve forgotten to use?  It’s like tossing money right into the garbage!

Monday: Meatloaf, brown rice, steamed veggies

Meal Plan Monday!

Hi Everyone!  Finally getting back into the swing of things after driving up the east coast and back.  Been gone over a week and now it’s time to get back to regular posting.  Here’s what we plan to eat this week:

Monday: Chili

Tuesday: Breakfast for dinner! Biscuits, sausage gravy, eggs

Wednesday: Loaded Baked Potato Soup

Thursday: Dinner with Small Group

Friday: Meatball Subs

Saturday: Fried Chicken, limas, and couscous

Sunday: Beef Stew

Meal Plan Monday!

It’s time for Meal Plan Monday.  We got a ton of yummy goodies in this week’s Bountiful Basket!  I was so excited to get eggplant and the rest of the fruits and veggies.  If you have a Bountiful Basket in your area, I highly recommend giving it a try.  We are thrilled to get so many fresh fruits and veggies for just $15.

Monday: Chicken/broccoli casserole

I swear time is just flying lately!  Seems like I just typed up a Meal Plan Monday and then here it is again!  Hope you all have had a great day and here goes:

Monday: Pot Roast with homemade mashed taters – Yep this was on my meal plan last week for yesterday, but we ended up going to a fall festival that had free food last night)

Tuesday: Sandwiches

Wednesday: Breakfast for dinner!

Thursday: Small Group from church and my friend is cooking this week!

Friday: Cabbage Rolls

Saturday: Orange Chicken for my hubby’s birthday along with a homemade birthday cake.

Sunday: Potluck with friends – we’ll be taking a fruit/veggie tray

 

Meal Plan Monday

Here goes with this week’s meal plan!  Lots of goodies to incorporate this week from our Bountiful Basket!  Been working on getting things out of storage – our house didn’t sell and since the market isn’t getting better and the holidays are coming up, we decided to go ahead and not renew our contract.  Making plans to maybe make some changes to our current home, though!

Monday: Fried Macaroni – throw ground beef, noodles, peppers, onions, and whatever you want into your skillet!

TuesdayCauliflower Soup, cheese biscuits

Wednesday: Bean Soup – never did get around to making this past week.

Thursday: Dinner with small group

Friday:Lemon Grilled ChickenCherry Tomato Corn Salad, 

Saturday: It’s my son’s 5th birthday, so he’s requested Paparonni’s Pizza!

Sunday: Potluck with friends – taking corn on the cob

It’s Monday again!  I didn’t get the bountiful basket this week since we had other plans, but I still have a few things left to use up!  Here goes with this week’s meal plan:

Monday: Spaghetti

Tuesday: Slow Cooker BBQ Chicken, homemade sandwich rolls 

Wednesday: Steak, broccoli cheese casserole, Butternut Squash Rolls 

Thursday: Dinner with our small group.  I think we’ll do chicken on the grill, baked potatoes, veggie kabobs.  Yum!

Friday: 15 Bean soup, cornbread

Saturday: kielbasa, couscous, steamed veggies

Sunday: Grilled Cheese, vegetable soup

It’s Monday again!  Time to make a meal plan!  Lots of goodies again in the Bountiful Basket this week. I enjoy getting it so I can think outside the box and make things that I wouldn’t normally make!  Here’s our plan for this week:

Monday: Hamburger,  mixed veggies, fried okra

Tuesday: Sweet Potato Casserole, grilled chicken, fresh rolls

Wednesday: Cube Steak in mushroom gravy, egg noodles

Thursday: Dinner with Small Group

Friday: Squash-Apple Bake

Saturday: Dinner out for my hubby’s grandfather’s birthday

Sunday: Potluck with friends – probably taking a dessert and maybe a pasta salad

Meal Plan Monday!

This past Saturday, I ordered a basket from Bountiful Baskets.  They just started one in my area and I was finally able to participate.  I was super excited about everything that was in my basket for just $15!  For more information on Bountiful Baskets, just click here.  To find the local Athens, GA branch, click here.

Not bad!  And everything was super great quality!  Since I ordered this basket, I’m going to try and work in some of these items into my meal plan in case any of ya’ll also received the same basket.  I’ve never cooked with cauliflower before so this will be interesting.  My kids are already working on the fruit and I plan to slice up and freeze most of the squash to use later.  I also am thinking about making homemade salsa with the tomatoes – maybe I’ll see if I can work that in for Tasty Tuesday.  Anyways, here goes!

Monday: Grilled Porkchops, Potato and Cauliflower Casserole

Tuesday: Stuffed Green Peppers, corn on the cob

Wednesday: Slow Cooker Lasagna

Thursday: Dinner with Small Group

Friday:  Chicken Enchiladas

Saturday: Sub sandwiches

Sunday: Potluck with friends – not quite sure what I’m bringing… probably homemade mac n cheese.

Meal Plan Monday!

Wow! I really struggled to make this week’s meal plan.  Nothing sounds good to me.  I had the kids help in figuring out this week’s meals along with a couple of my favorite online recipe blogs.

Monday: Nachos with black beans

Tuesday: Loaded Baked Potato Soup 

Wednesday: Steak, grilled summer veggies, baked potatoes (yes, I admit, I refuse to give up my summer veggies just yet!)

Thursday: Paparonni’s Pizza - First day hosting small group at our house so figured we’d have a yummy dinner!  On a plus side, the owner makes pretty much everything from scratch for his pizzas, so no soy!  My son was thrilled he could still eat at his favorite local pizza place!

Friday: Chicken and Mushrooms in Garlic White Wine Sauce, egg noodles, steamed broccoli

Saturday: Crockpot Salsa Chicken – This is super easy!  Just throw chicken breasts in the crock, pour a jar of salsa on top, cook on low all day and then serve over brown rice with a little mozzerella cheese on top.  YUM!

Sunday: Chili

Meal Plan Monday!

It’s Monday, so it’s time to figure out what to cook for the family this week.  This week, things are much different for my family from last Monday.  On Tuesday of last week, I received a call from our pediatrician.  We had been having some serious issues with my son’s stomach.  They sent him for tons of blood work.  When all was said and done, the results said that he is allergic to soy!  I didn’t figure it would be a huge deal until I started reading labels.  Soy is in everything from Cheez-its to cereal to cream of mushroom soup to Ritz crackers to well, practically everything.  It’s also in almost everything at restaurants as well.  We’ve never dealt with a food allergy before so this is very new to us.  We’ve seen a complete turnaround in my son though since we took him off everything that even had the smallest trace of soy in it.  He no longer has headaches and horrible stomach pains and everything else that he’s been dealing with.  Just that one ingredient made the difference.  Anyways, we’ve been hitting up Earth Fare and Trader Joe’s looking for some alternatives.  Even a bunch of items at those places contain soy!  Soy is considered a cheap protein so it’s in tons of things.  I already cook a ton from scratch, so I will be doing that even more now.  Now that you’ve read this novel, let’s move on to the meal plan!

By the way, if you are dealing with a soy allergy as well, I’d love to know what brands you’ve found to be soy free or any secrets/hints to dealing with an allergy when you are out of the house at a restaurant or a guest at someone else’s house.

Monday: Homemade Chicken Nuggets, mashed taters, and candied carrots.  My friend Janet has me hooked on these chicken nuggets.  They are so easy to make and are incredible!  Just chop your chicken breasts into nugget size pieces.  Soak in buttermilk for at least an hour.  Dip into plain flour and fry.  Lightly salt when they are finished cooking.

Tuesday: Raviolis with homemade tomato sauce.  I found soy-free raviolis at Trader Joe’s.  It has been really hard to find affordable sauce that doesn’t contain soy, so I decided I’d make my own!

Wednesday: Kids have requested BLTs again.  I don’t mind since tomatoes are in season and BLTs are so yummy!  Plus I make my own bread so I know it’s soy free!

Thursday: Country Fried Steak, Fried Okra, Black Eyed Peas, and homemade biscuits – hubby’s request :-)

Friday: Black Bean Quesidillas.  After searching high and low (and really low on the shelves!) I finally found a tortilla that was soy free at Trader Joes.  I think I’m in love with Trader Joes.  Thank you so much for opening a store in Athens!!

Saturday: Bowtie Pasta with Zucchini and Mozzerella

Sunday:  Calzones and a romaine salad

Monday: Cheesesteak Sandwiches – Thin sliced steak grilled with onions, peppers, and mushrooms.  Served on my homemade sandwich rolls.

Tuesday: Chicken, Broccoli, Brown Rice Casserole – easy and simple!

Wednesday: Pizza Bites – Recipe Courtesy of Our Family Eats!  Looks yummy!

Thursday:  Breakfast For Dinner – This is so easy and fun.

Friday:  Grilled Chicken, Grilled Zuchini, Tomato, Potato, and Squash Kabobs – YES I’m holding on to the last few veggie days of summer… I love my summer veggies!

Saturday: Bacon, Lettace, Tomato Sandwiches using my fresh homemade bread.  That reminds me, I’ve been meaning to write up a post about how I make my bread.

Sunday: Bean Soup, Homemade Cornbread
