Tasty Tuesday: Crockpot Unstuffed Pepper Medley

Quick and Easy dinner
Ingredients
  • 1 lb Ground Beef, cooked, and drained
  • 3 Medium Green Peppers, chunked
  • 1 Medium Onion, chopped
  • 32 oz Chicken Broth
  • 28 oz Crushed Tomatoes
  • 1 Tbsp Oregano
  • 1 Tbsp Parsley
  • 1 Clove Garlic, minced
  • 1 Cup Brown Rice, uncooked
  • 15 oz Black Beans, rinsed, drained
  • 1 cup Water
  • 1 Tsp Pepper
  • Salt to taste - feel free to skip since canned ingredients have salt
Instructions
  1. Cook the ground beef first and drain excess.
  2. Add remaining ingredients to crock pot.
  3. Cook on low 6-7 hours.
  4. Serve with cheese on top, optional.
