On Sunday I was in a position where I needed to fix a snack quickly for a bunch of people at my in-laws and wasn’t quite sure what I could make to serve. I noticed that there were a bunch of avocados, but no tomatoes or onions to pair with to make my usual guacamole. They also didn’t have a food processor so I was in a bit of a pickle.
There was a can of Ro-Tel in the pantry, so I decided to wing it! It turned out great! Everyone was raving about it and I was surprised at how simple it was to make.
First up, you’ll need to cut open 4 or 5 avocados and take the pit out. Put all the avocado goodness in a bowl. Add 1/2 can of Ro*Tel and juice from 1 small lime. You can add more Ro*Tel based on your preference.
Using a potato masher, mash it up! Don’t get too carried away since you will want a little bit of texture to the guacamole. The Ro*Tel already has salt in it, so you can serve it as is or add a teensy bit if you think it needs more.
Serve with chips and enjoy!
- 4-5 Avocados
- 1/2 Can Ro-Tel
- 1 Lime
- Cut open Avocados and take out the pit. Scrape avocado into small bowl
- Add in 1/2 can of Ro-Tel or preference.
- Juice 1 lime.
- Using a potato masher, mash all ingredients to combine.
- Salt if desired.
- Serve with Chips.
