As I think back to elementary school, I can remember a few times when I started feeling sick at school, whether with a virus or the flu. I’ve been following Trim Healthy Mama on and off for a year or so now and am tightening down my belt and getting to business to eat healthier this year. The other day on the Trim Healthy Mama group, a member named Lana shared a recipe for a single serving Trim Healthy Mama Focaccia Bread that everyone was raving about! I just had to give it a try! It completely lived up to everyone raving about it.
Lana has been so gracious and allowed me to share the Focaccia Bread recipe with you guys on my blog. If you’re looking for something low carb to make a grilled cheese, breakfast sandwich, garlic toast, a quick sandwich, or really anything, this is the recipe that you’ll want to try! Today I made the bread and then added some roast beef and spinach for a lovely S meal.
I love that I can make it right in my microwave and use the glass pan that I’m making it in to mix it up as well! Less clean up that way. Be careful pulling it out, though. It will be HOT!
For topping, you can make it however you like! I like to add dried minced onion, garlic, pepper, and some sea salt. It’s delicious with Mrs. Dash as well. You can truly add your favorite seasonings and make this your own.

I have a rather busy week ahead. The big kids are starting play practice and that’s going to be several nights a week on top of our normal busyness and the activities and chaos that come with having 5 active and homeschooling children.
This week, I have challenged myself to use my pressure cooker every night in some form or fashion. I’m also trying to stick to the Trim Healthy Mama way of eating with our meals. Here’s what we are making this week:
Monday: Chicken and Brown Rice Soup
Tuesday: Pork Loin, mashed cauliflower, green beans
Wednesday: Grilled Chicken and Sweet Potatoes
Thursday: Creamy Tuscan Garlic Chicken, Salad
Friday: Whole Chicken, okra, zucchini
Saturday: Chili Lime Chicken over brown rice
Sunday: Sausage, biscuits, egg casserole, applesauce

Good Monday morning everyone! We had a lovely weekend of sNOw. Just the very lightest of dustings here. The kids enjoyed it for all over about 5 minutes and then came inside due to the cold. Now off to a busy week where many of our activites have kicked off again! No fun picture to add to this post today because honestly my phone is full! LOL! I need to clean it off!
