We had a lovely weekend up in the mountains this weekend. I’m definitely a mountain girl and feel rejuvenated whenever we head up! There’s also just something about seeing your children play in the same places that I played when I was their age.
It’s so hard to believe that we are already in the middle of March already. Time is going by so fast!
On to the meal plan! Here’s what I plan to make this week!
Monday: Mrs Criddle’s Beef Enchiladas, salad
Tuesday: Quinoa, sweet potatoes, broccoli
Wednesday: Fajita Chicken Casserole, okra, salad
Thursday: Leftovers
Friday: Egg casserole
Saturday: Meatball parmesan Casserole, salad
Sunday: Southwest Chicken in the Crockpot, brown rice, salad
