Meal Plan Monday

Where did the last week go! Man it went by quick. We started my husband’s radiation last week and he did pretty well. He felt very nauseated a couple of the days and takes about a 4 hour nap after treatment, but we are happy to be chugging right along.
This past weekend, we also had my sister in law visiting from Texas with her son. It was a sweet time. We took them up to ride horses and had some fun painting horses 🙂
Here’s what we are having this week:
Monday: Meal from friends
Tuesday: Steak, potatoes, broccoli
Wednesday: Meal from friends
Thursday: Meal from friends
Friday: Pizza
Saturday: Leftovers
Sunday: Chicken, cole slaw, mac and cheese

Meal Plan Monday

We had a pretty good week last week. The kids got together with their cousins and had fun with our annual Easter egg hunt.
As I mentioned before, my husband’s cancer is back. It has spread to at least 2 lymph nodes and at this point requires radiation to move forward. We are on board with that plan. He will have 15 treatments and then hopefully that will be the end of this season. Even if it’s not, we will still give praise to God for giving us strength to move forward. I don’t really know how these next few weeks will look for our family. We are told that it’s likely that he will get sick, so we are preparing for the worst and hoping for the best. We appreciate prayers during this season.
Monday: Meal from friends
Tuesday: Nachos
Wednesday: Meal from friends
Thursday: Grilled chicken salad
Friday: Dinner out
Saturday: Leftovers
Sunday: Taco bar!

I think this would be a great way for teens to hang out and work out this summer!
For more information, you can check out this flyer or call/visit a Planet Fitness near you.
Meal Plan Monday

I love my new fridge magnetic board for menu planning! Isn’t it cool? It came with 3 markers and is the perfect size to write down everything we need to know.
Last week was pretty good and then ended shockingly. We found out that my husband’s cancer is back and spread to 2 lymph nodes in his lower back. That was definitely not expected by us or by his oncologist. This week, we will meet with the radiologist and then move on from there.
On to the meals:
Monday: Dinner Out
Tuesday: Buffalo Chicken Dip
Wednesday: Beans and rice
Thursday: Fettucini alfredo with broccoli
Friday: Dinner Out
Saturday: BBQ
Sunday: Ham, rolls, mac and cheese
Meal Plan Monday!

We had a fantastic Spring Break 2019! We had a bunch of family time, rode horses, played in creeks, had friends over, explored mountains, went on hikes, and more. It was epic! We even celebrated our 17th anniversary and thanks to my mom, scored 2 nights away from the kiddos. Now I think I need a spring break from the spring break! Not quite, though, as I do feel refreshed. It was so very much needed.
The week ahead brings more scans and a visit to the oncologist for my hubby to recheck. This is first one since after his cancerous tumor was removed. We are a little nervous but very hopeful that there isn’t any reoccurrence. Since it’s a busy week, I’m going to rely on some quick and easy meals.
Monday: Southwestern Quinoa
Tuesday: Egg casserole, toast
Wednesday: Grilled chicken salads
Thursday: Burritos
Friday: Cajun cream chicken
Saturday: Leftovers
Sunday: Sandwiches
