Meal Plan Monday

I think this will be a fairly slow and laid-back week for us.  Very much needed.  I’m hoping to get us caught up on school, hopefully clean and get a few things ready for a garage sale, and maybe do some organizing.  Starting my week off right with the meal plan!  Here’s what I plan to make this week:

Monday: Bean Soup, cornbread

Tuesday: Loaded Nachos

Wednesday: Sloppy Joes

Thursday: Ribs, rice, green beans

Friday: Black bean quesadillas

Saturday: Grilled Chicken and veggies

Sunday: BBQ Sandwiches

It’s Monday again!  This week has just flown by!  This upcoming week we are celebrating my youngest daughter’s 5th birthday!  For those of you that have followed me since the beginning, you may remember her going to the NICU at birth.  She’s now a very happy and healthy crazy girl and is turning FIVE!  Can’t believe it!

With a busy week ahead, I love having my meals all planned out.  Now I can head to the store with a list and get exactly what we need.

Monday: Mrs Criddle’s Chicken Enchiladas, salad

Tuesday: Lazy Lasagna

Wednesday: Cauliflower Chowder

Thursday: Dinner out!

Friday: Poppyseed Chicken

Saturday: Grilled cheese and soup

Sunday: Leftovers!

It’s Monday again!  We had a pretty good weekend here and a refreshing day at church.  My husband is getting closer and closer to having our rental home ready to be listed for sale.  I’m so excited about that!  For the week ahead, we will be celebrating my mom’s birthday, my nephew’s birthday, our youngest son’s baptism and of course the normal weekly chaos that surrounds being a homeschool mom of 5.  Here’s what we are making this week:

Monday: Chili (never got a chance to make it last week)

Tuesday: Grilled Chicken Salads

Wednesday: Spaghetti Squash Casserole

Thursday: Chicken Alfredo with broccoli

Friday: Burgers, veggies

Saturday: Dinner at my nephew’s party

Sunday: Leftovers!

Is it just me or are Mondays coming faster than ever?  I do have to admit that I enjoy Mondays.  I like getting back into the swing of our routine and making progress through our homeschooling books.  I really enjoy meal planning as well.  I like to try new recipes and bring back old favorites.  Actually going to repeat a few meals that were on our plan last week as we didn’t get the chance to make everything!  Here’s what I’m making this week:

Monday: Beef Stew

Tuesday: Salsa Chicken

Wednesday: Dinner with friends

Thursday: Poppyseed Chicken (Frozen from double batch last week)

Friday: Kielbasa, brussel sprouts

Saturday: Chili

It’s the first Monday of the new year!  I’m going to be writing up my goals and such later, but for starters, let’s get a meal plan going!  We were able to get a bunch of chicken for really cheap – like $1 a pound, so you will see a lot of chicken in our future!  Here’s what I’m making this week:

Monday: Meatloaf, kale

Tuesday: Poppyseed Chicken, broccoli

Wednesday: Homemade Pizza

Thursday: Crockpot Pepperjack Chicken, salad

Friday: Hamburgers, asparagus, brown rice

Saturday: Grilled Chicken, Sweet Potatoes

Sunday: Salsa Chicken, Brown Rice

I don’t know about yall but I’m so surprised that the holiday season has already come and went!  It was crazy fast!  Didn’t even feel like the holidays with our nearly 80 degree weather!  When it gets cold again, I’d love a Christmas do-over!  Now back to the grind and trying to eat healthy again without as many meals out.  We stay so busy during the holidays that we eat out way too much!  Waistlines are definitely feeling it!  Here’s what we plan to make for dinners this week:

Monday: Easy Low Carb Taco Pie 

Tuesday: Crockpot Salsa Chicken

Wednesday: Black Bean burritos

Thursday: Dinner out

Friday: Steak, black eyed peas, collard greens, cornbread

Saturday: Burgers, broccoli, brown rice

Sunday: Leftovers

It’s Christmas week!  It surely doesn’t feel like it with all the crazy weather that we’ve been having!  This week I definitely need a meal plan with all the organized chaos!

Monday: Dinner out with hubby to finish Christmas shopping

Tuesday: Burgers, mac and cheese, salad

Wednesday: Breakfast for dinner!  Eggs, biscuits, sausage!

Thursday: Pizza, our Christmas Eve tradition!

Friday: Lasagna

Saturday: Nachos

Sunday: Leftovers or fix your own dinner :-)

It’s Monday again!  Working on my meal plan.  This week, we have the baby’s 2 month old checkup and shots, 2 birthday parties to attend, and lots of homeschool work to do.  I’ll be making the meals fairly simple those nights!  Here’s what we plan to make this week:

Monday: Bean Soup

Tuesday: Pizza

Wednesday: Chicken Nuggets, macaroni and cheese, broccoli (for the kids – I am going out for my besties birthday!)

Thursday: Sour Cream Beef Enchiladas – this is my husband’s favorite dish and it’s his birthday!

Friday: Chicken Alfredo in the crockpot

Saturday: Kielbasa, Kale, and Sweet Potatoes
