It’s Meal Plan Monday again! This week, I’m making some of our favorite recipes and comfort food. Can’t wait! Here’s what I’m making this week:
Monday: Butternut Squash Lasagna
Tuesday: Hamburgers, broccoli, fingerling potatoes
Wednesday: Sausage and Peppers Spaghetti Squash
Thursday: Nachos with super simple guac.
Friday: Egg roll in a bowl
It’s Monday again! Working on my meal plan. This week, we have the baby’s 2 month old checkup and shots, 2 birthday parties to attend, and lots of homeschool work to do. I’ll be making the meals fairly simple those nights! Here’s what we plan to make this week:
Monday: Bean Soup
Wednesday: Chicken Nuggets, macaroni and cheese, broccoli (for the kids – I am going out for my besties birthday!)
Thursday: Sour Cream Beef Enchiladas – this is my husband’s favorite dish and it’s his birthday!
Friday: Chicken Alfredo in the crockpot
Saturday: Kielbasa, Kale, and Sweet Potatoes
Sunday: Grilled Cheese and Soup
Monday, Monday. It’s Monday again! Time for our meal plan:
Monday: Kielbasa, fried okra, brussel sprouts
Tuesday: Black beans and rice
Wednesday: Crock Pot Chicken Quesadillas
Thursday: My oldest son turns 9! He’s requested fried chicken, crockpot mac and cheese, okra, and Bush’s beans. Strawberry shortcake will round out the evening.
Friday: Create your own omelette, biscuits
Saturday: Homemade pizza!
Sunday: Shrimp, salad, cheddar cheese biscuits
We had a great weekend filled with birthday parties, pool parties, and getting ready for back to homeschool! My oldest turned 12 yesterday so we had fun celebrating her as well. Now we are back to the grind. Time to meal plan!

Wednesday: Steak, Cauliflower & Broccoli Au Gratin
Thursday: Lemon Chicken, brown rice, veggies

Whew! Where in the world did the last week go? I can’t believe it’s Monday already! We are gearing up to start a fresh new year of homeschool soon. I’ve been working on organizing, tossing, and purchasing new curriculum. I still feel so much more organized if I have a meal plan in front of me for the week ahead. The week always goes so much more smoothly! This week, here’s what we plan to make:
Monday: Hamburgers, fresh corn, fries
Tuesday: Pork chops, mashed cauliflower
Wednesday: Chicken Alfredo
Thursday: Create your own omelette, biscuits
Friday: Dinner out

Woo hoo! It’s Monday and I’m feeling GREAT! That’s because my husband finally had 2 days off in a row now that the trial is done. It was great to have him around again and the kids were thrilled. We spend the weekend pretty much just chilling at the house catching up on stuff. Since it’s Monday, I’ve gotta come up with my meal plan! This week we are actually eating out more than usual because of different things going on. Here goes:
Monday: Dinner out with church friends
Tuesday: Dinner at a friend’s house
Wednesday: Dinner out on way to see Cirque du Soleil
Thursday: Poppyseed Chicken, salad
Friday: Steak, broccoli with cheese, sweet potatoes
Saturday: Dinner out at the National Night Out
Sunday: Crockpot lasagna

This weekend was crazy and busy, yet lots of fun! We had a picnic to attend and then later Saturday night, my good friend had her baby! A whopping 10 pounder! He’s such an adorable and squishy guy!
Another busy week ahead as my husband got picked for a 3 day jury trial! Given his line of work, we figured he’d be easily dismissed. Nope! I was so looking forward to him finally being off today, but instead, I’m back at it with single parenting. It’s been a long 2 months of this. There have been candy bribes, TV watching, and banishment to the great outdoors so far today. I was really surprised he was picked since they also have a huge trial going on that should be finishing any day now that he’s been helping with, requiring lots of overtime. Never a dull moment around here, but this mama really needs a break, and her husband.
Moving right along, it’s time to check the fridge and see what needs to be used up! Here’s what we plan to make this week:
Monday: Steak, salad, broccoli
Tuesday: Thai Chicken, brown rice, steamed veggies
Thursday: Grilled cheese sandwiches, chips, fruit
Friday: Chicken alfredo with broccoli
Saturday: Grilled Chicken and sweet potatoes
Sunday: Steak stir fry

It’s Monday again! Last week ended up getting a little hectic so we didn’t have a few meals that I had planned on having. Since I still have the ingredients on hand, I’m going ahead and adding those meals to my planner. My meal plans may fluctuate again this week as I wait for my bestie to have her baby boy. Time will tell!
Monday: Meatloaf, salad
Tuesday: Chicken from my Crockpot Quesadilla recipe over brown rice
Wednesday: Sour Cream Beef Enchiladas
Thursday: 3 Cheese Chicken Casserole
Friday: Crockpot Egg Casserole

Sunday: Breakfast for dinner! Eggs, bacon, biscuits
Whew! After last week’s chaos, I’m hoping this week turns out to be much smoother. I’m starting the weak out right by making my meal plan for the week so I can go grocery shopping! Nothing worse than wasting food that we worked hard to purchase. We recently bought 40 lbs of chicken for $1.69/lb through Zaycon Foods, so you’ll see lots of chicken recipes now Here’s what we plan to make this week:
Monday: Crock Pot Chicken Quesadillas – Kids will have the quesadillas. I’ll make mine lower carb by eating the chicken filling over salad. YUM!
Tuesday: Homemade pizzas
Wednesday: Steak, sweet potatoes, salad
Thursday: BBQ Chicken, veggies
Friday: Slow Cooker Chicken Fajitas
Saturday: Taco Pie. This was a huge hit with the family and they are requesting it again.
