It’s Monday, so time to plan out your meals for the week!  I made a Meal Plan Monday printable meal planner PDF file that I uploaded so you guys can use it too!  I like to put mine on the fridge so the kids know exactly what we are having and when.  CLICK HERE to print it.

I haven’t been meal planning much lately and need to get back into it with our school year starting.  Here’s what we are having this week:

Monday: Grilled Chicken Salads

Tuesday: Dinner with friends

Wednesday: Breakfast for dinner – Eggs, bacon, biscuits

Thursday: Spaghetti

Friday: Camping out, so hotdogs and baked beans

Saturday: Hamburgers, chips, fruit

Sunday: Rotisserie Chicken, broccoli, brown rice

Time for meal planning!  Oh how I wish it were a little cooler out so we can start making delicious soups and stews.  We are set for another HOT week this week, so let’s try and keep the kitchen cool.

Monday: Chicken nuggets, quinoa, broccoli

Tuesday: Avocado Pesto Pasta

Wednesday: Hamburgers on the grill, baked potatoes, salad

Thursday: Dinner with friends

Friday: Spinach Quiche

Meal Plan Monday


Yes, it’s been forever since I’ve done a meal plan.  FOREVER.  Why?  Simply put, life has been crazy.  I’m talking can’t even see straight crazy.  It’s finally settling back down and our budget can no longer handle not having a meal plan.  We’ve been eating out way too much and sadly some food has been wasted.  I’m hoping back on board with some planning and hoping to get things back in line.  Here is this week’s meal plan for my family:

Monday: Steak, baked potatoes, broccoli

Tuesday: Nachos

Wednesday: Grilled Chicken Roll Ups

Thursday: Lasagna, Salad

Friday: Beef stew in the crockpot

Saturday: Homemade pizza

Sunday: Leftovers

It’s meal planning Monday again!  I did get a Bountiful Basket this past week so that helped a bunch in creating my meal plan.  If you haven’t participated in a Bountiful Basket co-op yet, you’re missing out!

Monday: BBQ Chicken, green beans, sweet potatoes

Tuesday: Grilled Cheese and tomato soup

Wednesday: Homemade Pizza

Thursday: Steak, grilled corn, grilled squash

Friday: Meatballs with Zucchini Noodles

Saturday: Hamburgers with sweet potato fries

Sunday: Chicken quesidillas

Meal Plan Monday

Last week I didn’t make a meal plan and boy did we ever pay for it!  My week goes so much more smoothly with a plan!  A good friend of mine has also introduced me to a concept that she does.  When she shops once a week, she comes home and immediately slices, dices, prepares and cooks everything so that way when it’s dinner time, all she has to do is pull it out and pop it in the oven or in the frying pan to warm up.  This has really intrigued me, and although I’m not quite to that point, I am starting to prepare more things in advance such as cooking a big quantity of meat to use in dishes throughout the week.  Maybe one day I’ll be as organized as she is!  Until then, here’s my meal plan!

Monday: Burgers, homemade french fries, romaine salad

Tuesday: BLTs, chips, fruit

Wednesday: Homemade Chicken Nuggets, fried okra, steamed broccoli

Thursday: It’s my oldest kid’s birthday!  She has requested Chicken enchiladas!

Friday: Meatloaf, fried rice, sauteed zucchini

Saturday: Leftovers

Sunday: Pulled pork in the crock pot – BBQ Sandwiches

Tasty Tuesday: Make Breakfast Burritos From Scratch (And Freeze For Later!)

I’ve been struggling lately trying to make sure my husband gets a good breakfast before he leaves for work, especially since a kid or two is usually awake by the time he’s heading out.  I had seen several different recipes online for making breakfast burritos, but I needed something that was completely from scratch due to my son’s allergy.  You know when you make something for Dad, everyone wants to try it!

First up, I made some tortillas.  These actually ended up being much easier and tastier than I expected!

Tortilla Ingredients:

  • 4 cups all purpose flour
  • 1/8 tsp baking powder
  • 1/2 cup butter, softened
  • 1 1/2 tsp salt
  • 1 cup warm water

First up, combine the flour and the baking powder in one bowl.  Add the butter.  It’s best to use your hands to combine these ingredients.  Set aside.

Dissolve the salt in the warm water and pour over the flour mixture.  Again, use your hands, working everything together and ending up with a large bowl.  Cover and set aside for 10 minutes.

Heat up a frying pan over medium heat.

Divide the dough into 12 small balls.  Flatten each one into a circle using a rolling pin on a floured surface, making it as thin as possible.

Making circles can be complicated.  Some of mine weren’t quite circular, but it was about 11pm so I no longer cared :-)

Put flattened dough in frying pan, cooking for 20 seconds and then flipping to the other side and also cooking for 20 seconds.  Remove and add next tortilla.

Once the 12 tortillas are done, now comes the fun part of making the filling!  The filling can be pretty much whatever you want it to be.  My husband loves eggs and sausage, so that’s what I filled them with this time.

Filling Ingredients:

  • 1 lb sausage
  • 1 dozen eggs, scrambled
  • chopped onions
  • chopped peppers
  • 8 oz shredded cheddar cheese

Cook the sausage, onions, and peppers until done and drain.  As far as how much to use of peppers and onions, that’s up to you.  Everyone has different desires.  We used about a half a bag of a frozen pepper/onion blend.  Feel free to throw in mushrooms, bacon, or whatever else you want to add!

Once the sausage and veggies are done and drained, stir in the scrambled eggs and cook.  Turn off the stove when the eggs are done and then stir in the cheese.

Place a scoop in each tortilla and roll up like a burrito!

Use immediately or freeze!  Wrap in plastic wrap or in a freezer bag and squeeze out the extra air.  To eat, simply microwave 50 seconds and then flip.  Microwave another 50 seconds.  Enjoy!

It’s Monday and a great week for barbecues and everything else fun!  I’m recovering from last week’s VBS fun and now it’s time to start meal planning again.  I admit that we ended up dining out a bit more than normal last week!  I’ve been googling and pintresting this morning look for some new recipes to try, so I have those linked below.  Here’s my meal plan – feel free to comment with yours!

Monday: Cheesy Hamburger and Broccoli Casserole (substituting with fresh ingredients and no mayo)

Tuesday: Honey Lime Chicken Skewers 

Wednesday: Fried Chicken, mashed potatoes, apple pie, watermelon, and everything else good!

Thursday: Meatballs with zucchini noodles

Friday: Hotdogs and homemade macaroni and cheese – kids requesting this!

Saturday:  Nachos with shredded chicken – another kid request!

Sunday: Leftovers!
