I haven’t been meal planning much lately and need to get back into it with our school year starting.  Here’s what we are having this week:

Time for meal planning!  Oh how I wish it were a little cooler out so we can start making delicious soups and stews.  We are set for another HOT week this week, so let’s try and keep the kitchen cool.

Monday: Chicken nuggets, quinoa, broccoli

Wednesday: Hamburgers on the grill, baked potatoes, salad

Thursday: Dinner with friends

Yes, it’s been forever since I’ve done a meal plan.  FOREVER.  Why?  Simply put, life has been crazy.  I’m talking can’t even see straight crazy.  It’s finally settling back down and our budget can no longer handle not having a meal plan.  We’ve been eating out way too much and sadly some food has been wasted.  I’m hoping back on board with some planning and hoping to get things back in line.  Here is this week’s meal plan for my family:

Monday: Steak, baked potatoes, broccoli

Tuesday: Nachos

Wednesday: Grilled Chicken Roll Ups

Thursday: Lasagna, Salad

Friday: Beef stew in the crockpot

Saturday: Homemade pizza

Sunday: Leftovers

It’s meal planning Monday again!  I did get a Bountiful Basket this past week so that helped a bunch in creating my meal plan.  If you haven’t participated in a Bountiful Basket co-op yet, you’re missing out!

Monday: BBQ Chicken, green beans, sweet potatoes

Tuesday: Grilled Cheese and tomato soup

Wednesday: Homemade Pizza

Thursday: Steak, grilled corn, grilled squash

Friday: Meatballs with Zucchini Noodles

Saturday: Hamburgers with sweet potato fries

Sunday: Chicken quesidillas

Meal Plan Monday

Last week I didn’t make a meal plan and boy did we ever pay for it!  My week goes so much more smoothly with a plan!  A good friend of mine has also introduced me to a concept that she does.  When she shops once a week, she comes home and immediately slices, dices, prepares and cooks everything so that way when it’s dinner time, all she has to do is pull it out and pop it in the oven or in the frying pan to warm up.  This has really intrigued me, and although I’m not quite to that point, I am starting to prepare more things in advance such as cooking a big quantity of meat to use in dishes throughout the week.  Maybe one day I’ll be as organized as she is!  Until then, here’s my meal plan!

Monday: Burgers, homemade french fries, romaine salad

Tuesday: BLTs, chips, fruit

Wednesday: Homemade Chicken Nuggets, fried okra, steamed broccoli

Thursday: It’s my oldest kid’s birthday!  She has requested Chicken enchiladas!

Friday: Meatloaf, fried rice, sauteed zucchini

Saturday: Leftovers

Sunday: Pulled pork in the crock pot – BBQ Sandwiches
