Happy Monday everyone!  We had a great weekend celebrating my middle daughter’s 11th birthday! Camping, horse riding, swimming, and sundaes as a family.  The kids also found the biggest walking stick I’ve ever seen!  We’ve all been staying healthy and still staying away from crowds for the most part.  Hope you all are doing well.  Here’s our menu for the week –

Monday: BBQ, veggies

Tuesday: Spaghetti, green beans

Wednesday: Hot dogs, baked potatoes

Thursday: Nachos

Friday: Poppyseed Chicken

Saturday: Grilled chicken salad

Happy Monday!  Again!  We had a great week last week, and finally had Christmas with my brother’s family.  One of their children had to be rushed to Scottish Rite for possibly flu complications.  He spent several days there and finally was able to return home.  So thankful to get our crew together.  The picture above shows my 5, my brother’s 5, and my incredible mom.

The week ahead brings a reminder of last year’s cancer for my husband.   He has some tests this week, that we hope are clear so we can continue on as normal.  Getting tests every 3 months is a consistent reminder that this is the journey we are on and will continue on for several years.  I’m thankful that that’s all we have to do right now, but I will be really thankful when all the medical bills stop! Ha!

Today is a special Monday because my youngest, my baby, turns 4 today!  We have a big day planned with his 2 best buddies.  He wants a fireworks party so we are going to do some sparklers and little fireworks in our culdesac.

We had a great weekend.  The older 2 kids went on a church youth retreat and then we added 2 littles to our family this weekend.  It was a great time.  Hope you have a great week!

Monday: Popcorn Chicken, mac and cheese, veggies

Tuesday: Fajita Chicken Casserole, salad

Wednesday: Chili

Thursday: Afredo Chicken Casserole

Friday: Sandwiches

We finally are starting our homeschool year back today!  We are going to have a slower start and just do core stuff this week and then next week we will go full on.  My 3 year old is starting a preschool program at a local church this week and he’s super excited about that.  It will be so helpful for us to have him a little more occupied this year.

Here’s what we are making this week:

Monday: Kielbasa, veggies

Tuesday: Roast and veggies

Wednesday: Southwestern Chicken and brown rice

Thursday: Taco Pie

Friday: Grilled Chicken and veggies

I hope everyone had a great Fourth of July!  We sure did!  We spent some time with my hubby’s brother, some friends, and had a great time.  Lots of great memories.

This is going to be a hard week.  It’s already packed full of stuff, both wonderful and painful!  Would appreciate prayers for our family this week as my husband has a procedure related to his cancer done and it’s also the first anniversary of my nephew’s brain AVM rupturing.  On a bright note, our middle child turns 10!

We enjoyed the Mountain Top Rodeo in Dahlonega this past weekend.  It’s a yearly tradition for us.  I started going to this rodeo when I was young and I love that I can now share the fun with my kids.  We had an exhausting weekend but our hearts are full after a lot of family time.

This has been a season of change for us.  One thing that has changed is that we are going to a new church.  It’s VBS week, so this week will be busy but fun!  I volunteered to help, so I’m going to have some easy meals so we can make it through.  Today was day 1 and it went well.  I’m excited to start meeting some new people and my kids have been making some great new friends.

Monday: Fettucine Alfredo with chicken and broccoli

Tuesday: Trim Mac Salad

Wednesday: Soup and Sandwiches

Thursday: Lasagna

Friday: Dinner at church

Saturday: Dinner out

Well, we were supposed to have 5 more days of radiation treatment for my husband left but the radiation machine broke.  So now have to wait until it’s fixed to continue radiation.  He’s doing well overall, but feeling nauseous a lot.  We are ready to have this season behind us for sure.

This week, I’m going to be doing homeschool testing with a couple of my kids.  We aren’t quite finished with our homeschool year but we are getting there.  We will probably still continue some computer work during the summer to stay fresh.  Here’s our meal plan for the week:

Monday: Chicken Fried Rice

Tuesday: Pizza

Wednesday: Cookout with friends

Thursday: Beans and Rice

Friday: Grilled chicken, brussels

Saturday: Hamburgers, green beans

Sunday: Brats, mac and cheese

We had a pretty good week last week.  The kids got together with their cousins and had fun with our annual Easter egg hunt.

As I mentioned before, my husband’s cancer is back.  It has spread to at least 2 lymph nodes and at this point requires radiation to move forward.  We are on board with that plan.  He will have 15 treatments and then hopefully that will be the end of this season.  Even if it’s not, we will still give praise to God for giving us strength to move forward.  I don’t really know how these next few weeks will look for our family.  We are told that it’s likely that he will get sick, so we are preparing for the worst and hoping for the best.  We appreciate prayers during this season.

I love my new fridge magnetic board for menu planning!  Isn’t it cool?  It came with 3 markers and is the perfect size to write down everything we need to know.

Last week was pretty good and then ended shockingly.  We found out that my husband’s cancer is back and spread to 2 lymph nodes in his lower back.  That was definitely not expected by us or by his oncologist.  This week, we will meet with the radiologist and then move on from there.

On to the meals:

Tuesday: Buffalo Chicken Dip 

Wednesday: Beans and rice

Thursday: Fettucini alfredo with broccoli

We had a fantastic Spring Break 2019!  We had a bunch of family time, rode horses, played in creeks, had friends over, explored mountains, went on hikes, and more.  It was epic!  We even celebrated our 17th anniversary and thanks to my mom, scored 2 nights away from the kiddos.  Now I think I need a spring break from the spring break!  Not quite, though, as I do feel refreshed.  It was so very much needed.

The week ahead brings more scans and a visit to the oncologist for my hubby to recheck.  This is first one since after his cancerous tumor was removed.  We are a little nervous but very hopeful that there isn’t any reoccurrence.  Since it’s a busy week, I’m going to rely on some quick and easy meals.

Monday: Southwestern Quinoa

Tuesday: Egg casserole, toast

Wednesday: Grilled chicken salads

Thursday: Burritos

Friday: Cajun cream chicken

Saturday: Leftovers

Sunday: Sandwiches
