Single Serve Focaccia Bread - Trim Healthy Mama - THM S - Low-Carb

I’ve been following Trim Healthy Mama on and off for a year or so now and am tightening down my belt and getting to business to eat healthier this year.  The other day on the Trim Healthy Mama group, a member named Lana shared a recipe for a single serving Trim Healthy Mama Focaccia Bread that everyone was raving about!  I just had to give it a try!  It completely lived up to everyone raving about it.

Lana has been so gracious and allowed me to share the Focaccia Bread recipe with you guys on my blog.  If you’re looking for something low carb to make a grilled cheese, breakfast sandwich, garlic toast, a quick sandwich, or really anything, this is the recipe that you’ll want to try!  Today I made the bread and then added some roast beef and spinach for a lovely S meal.

I love that I can make it right in my microwave and use the glass pan that I’m making it in to mix it up as well!  Less clean up that way.  Be careful pulling it out, though.  It will be HOT!

For topping, you can make it however you like!  I like to add dried minced onion, garlic, pepper, and some sea salt.  It’s delicious with Mrs. Dash as well.  You can truly add your favorite seasonings and make this your own.

Foccacia Bread
Ingredients
  • 1tbsp melted butter
  • 1Tbsp olive oil
  • 1egg
  • 3 Tbsp Almond flour
  • 2 tsp Parm. Cheese
  • 2 tsp Protein powder.
  • 1/4 tsp baking powder
Instructions
  1. Mix all ingredients together well!
  2. Pour it into a lightly greased pan for baking or mix it right in a glass bowl for microwave
  3. Top with salt, pepper, dried basil and onion, garlic powder. Add Cayenne if you like!! Drizzle with olive oil.
  4. Bake at 375 for 15 min OR Microwave 1 min. 40 seconds -2 minutes.

    Made this today. I didn’t have protein powder and left it out. Sooooo good. I cut it in half and made a panini with roast beef, Swiss cheese and spinach. Also a teaspoon of mayo. Wow! I had tell my brain it was ok to eat such tasty food.

      I haven’t tried it, but give it a whirl and see. I’m guessing you might need a little extra moisture for it, though.

    I didn’t have plain protein powder so I omitted it. I used one tbs flax meal and 2 TBs almond meal instead of the 3 tbs almond meal. I also used ghee instead of butter and oil…used only 1 tbs of it maybe…maybe a touch more. Anyway it is delicious. Cooked it in a round glass storage container…wanted it flatter. Cut it in half topped with a touch more cheese, roast beef, Dijon and lettuce. I’m having trouble rating this recipe but I would give it 5stars

    So do i measure the carbs n such based on each ingredient? Not quite sure if this is how to determine letter grade. I see it says S but just wanna know how much more fat i can have like on my coffee, etc

    I dont know if i make sense.

    So good! Great recipe! I did sub thm baking blend for the almond flour. Also added olives as a topping
