Tasty Tuesday: Make Breakfast Burritos From Scratch (And Freeze For Later!)

I’ve been struggling lately trying to make sure my husband gets a good breakfast before he leaves for work, especially since a kid or two is usually awake by the time he’s heading out.  I had seen several different recipes online for making breakfast burritos, but I needed something that was completely from scratch due to my son’s allergy.  You know when you make something for Dad, everyone wants to try it!

First up, I made some tortillas.  These actually ended up being much easier and tastier than I expected!

Tortilla Ingredients:

  • 4 cups all purpose flour
  • 1/8 tsp baking powder
  • 1/2 cup butter, softened
  • 1 1/2 tsp salt
  • 1 cup warm water

First up, combine the flour and the baking powder in one bowl.  Add the butter.  It’s best to use your hands to combine these ingredients.  Set aside.

Dissolve the salt in the warm water and pour over the flour mixture.  Again, use your hands, working everything together and ending up with a large bowl.  Cover and set aside for 10 minutes.

Heat up a frying pan over medium heat.

Divide the dough into 12 small balls.  Flatten each one into a circle using a rolling pin on a floured surface, making it as thin as possible.

Making circles can be complicated.  Some of mine weren’t quite circular, but it was about 11pm so I no longer cared 🙂

Put flattened dough in frying pan, cooking for 20 seconds and then flipping to the other side and also cooking for 20 seconds.  Remove and add next tortilla.

Once the 12 tortillas are done, now comes the fun part of making the filling!  The filling can be pretty much whatever you want it to be.  My husband loves eggs and sausage, so that’s what I filled them with this time.

Filling Ingredients:

  • 1 lb sausage
  • 1 dozen eggs, scrambled
  • chopped onions
  • chopped peppers
  • 8 oz shredded cheddar cheese

Cook the sausage, onions, and peppers until done and drain.  As far as how much to use of peppers and onions, that’s up to you.  Everyone has different desires.  We used about a half a bag of a frozen pepper/onion blend.  Feel free to throw in mushrooms, bacon, or whatever else you want to add!

Once the sausage and veggies are done and drained, stir in the scrambled eggs and cook.  Turn off the stove when the eggs are done and then stir in the cheese.

Place a scoop in each tortilla and roll up like a burrito!

Use immediately or freeze!  Wrap in plastic wrap or in a freezer bag and squeeze out the extra air.  To eat, simply microwave 50 seconds and then flip.  Microwave another 50 seconds.  Enjoy!

    I’ve been wanting to try these too! Homemade tortillas are so much better than store-bought, and yours look fantastic! Think I’ll give this one a try for next week. Thanks for sharing!
