Wow. Last week got a little crazy and I only made 2 things off my meal plan! The rest ended up being super quick grab and go or leftover meals. Some weeks are just like that and we roll with it. I have to say, though, that the Chicken and Brown Rice Soup that I made on Monday last week was one of the best ever! It’s definitely going on the meal plan this week and again in the future!
Monday: Chicken Florentine (pg 46 of the Trim Healthy Mama Cookbook), zucchini
Tuesday: Black beans and rice
Wednesday: Trim Mac Salad (pg 181 of the Trim Healthy Mama Cookbook)
Thursday: Chili Lime Chicken over brown rice
Friday: Chicken Fajita Casserole, salad
Saturday: Leftovers
Sunday: Chicken and Brown Rice Soup, garlic bread
