Better late than never! It’s been a busy time lately with chiropractor visits, school, life, etc. It never slows down! We’ve been so busy that eating healthy has been taking the back burner, but I’m gearing up for us to begin eating healthy again. I’m ready for summer veggies and fruits that are a bit cheaper so we can enjoy that goodness. Until then, doing our best to keep the budget in line and eat healthy. Looks like there will be some beautiful days this week! Can’t wait to take our school outside and enjoy it.
Other things I plan to make this week are my freezer breakfast burritos . It’s so easy to just heat one up in the mornings when I have a busy day ahead. Also planning to make some Buffalo Chicken Dip to use up some of the celery we have. It’s perfect to dip the celery into.
Besides that, here’s what we are having this week:
Monday: Leftovers
Tuesday: THM Crockpot White Chicken Chili, with grilled cheese for the kids
Wednesday: Grilled Chicken Salads
Thursday: Jalapeno Popper Stuffed Pork Loin, okra, low carb garlic and cheddar biscuits
Friday: Chicken Quesadillas, salad
Saturday: Good Grub from the THT cookbook – p. 64
Sunday: Baked Pasta, salad, garlic bread
